- Supervise day-to-day operations of the stewarding department, including scheduling, performance management, and staff training.
- Develop and implement departmental policies to meet cleanliness, hygiene, and safety standards.
- Conduct regular inspections of kitchens, dishwashing areas, and storage facilities to maintain sanitation and regulatory compliance.
- Monitor inventory of cleaning supplies, chemicals, and utensils, coordinating replenishments with procurement.
- Ensure dishwashing machines and cleaning equipment are maintained and serviced on time.
- Collaborate with culinary and banquet teams to ensure smooth operations and efficient workflow.
- Train stewards on safe cleaning practices, PPE usage, and emergency procedures.
- Investigate and report accidents, incidents, or health violations, implementing corrective actions.
- Maintain accurate documentation of sanitation practices, schedules, and training records.
- Strong knowledge of food safety standards (HACCP) and sanitation practices.
- Culinary operations understanding, including equipment handling and kitchen workflows.
- Experience in menu support, food handling, and basic culinary expertise is an advantage.
- Skilled in inventory and cost control, reducing wastage, and maintaining stock efficiency.
- Excellent leadership, problem-solving, and decision-making skills.
- Ability to work long hours in a fast-paced hospitality environment.
