This role ensures compliance with local regulations, international guidelines, and brand standards, safeguarding both guest and staff wellbeing. - Implement and maintain food safety management systems (FSMS) in compliance with local hygiene regulations
- Maintain records of hygiene forms, checks, audits, and corrective action reports
- Conduct regular inspections of kitchens, storage, and food transport equipment to ensure hygiene standards are met
- Verify food storage practices including covering, labeling, and FIFO rotation procedures
- Monitor refrigeration and freezer temperatures to ensure compliance with safety requirements
- Liaise with pest control providers and housekeeping to address pest-related issues and evaluate performance
- Coordinate microbial food testing with suppliers, kitchens, and labs when needed
- Conduct hygiene audits of staff, provide feedback, and implement corrective actions
- Train all food handlers on hygiene and food safety standards; provide refresher courses as required
- Work closely with the executive chef, purchasing, and stewarding teams to ensure food safety compliance across operations
- Previous experience as a Hygiene Officer or similar role in a 5-star hotel or hospitality environment
- Strong understanding of HACCP, FSMS, and food hygiene standards
- Excellent organizational skills with the ability to work in a fast-paced environment
- Ability to lead training sessions and engage a diverse team of food handlers and kitchen staff
- Strong decision-making, inspection, and problem-solving skills
- Good communication skills in English; additional languages are a plus
