Join the culinary team at InterContinental Abu Dhabi as a Demi Chef de Partie - Sushi, and showcase your expertise in Japanese cuisine in one of Abu Dhabi's premier luxury hotels.As Demi Chef de Partie - Sushi, you will assist in managing the sushi station, preparing high-quality sushi and sashimi with attention to detail, freshness, and authenticity. You will support the Chef de Partie in daily operations, guide junior team members, and help elevate our Japanese culinary offerings.A little taste of your day-to-day:Every day is different, but you'll mostly do:
- Prepare and present traditional and modern sushi, sashimi, and maki with precision and consistency.
- Ensure freshness, proper storage, and handling of all fish and seafood.
- Maintain mise-en-place and station cleanliness at all times.
- Follow HACCP standards and ensure hygiene and food safety across all processes.
- Collaborate with the Chef de Partie on menu development, daily specials, and seasonal offerings.
- Monitor stock levels and assist with ordering and inventory control.
- Train and guide junior Commis chefs and maintain smooth workflow in the sushi section.
- 2-3 years of experience in a sushi-specific kitchen, preferably in a 4 or 5-star hotel or fine dining Japanese restaurant.
- Formal culinary training, with emphasis on Japanese or Asian cuisine preferred.
- Strong knife skills and expert knowledge of sushi preparation and plating techniques.
- Understanding of proper fish handling, storage, and filleting.
- Passion for Japanese culinary arts with creativity and attention to detail.
- Team player with a positive attitude and ability to work in a fast-paced environment.
- Flexible to work shifts, including weekends and holidays.
